Is it alright to make special requests when ordering "assorted Sushi?"?
I'm looking at getting Sushi tomorrow: 7 pieces of assorted Sushi and a Tuna roll. I'm going to tell them that I don't want anything with "special sauces"/mayo or anything fried. Is it alright if I ask them if they can include eel and/or fish roe in the assortment?

Most sushi has no sauce/mayo (the spicy maki usually has a sauce made of mayo and sriracha sauce in it) and if there is anything fried in them, like the recently popular tempura sushi, it will say so on the menu. However, sushi will often have a tiny bit of wasabi between the fish and the rice.
Unless the restaurant has a "no substitute policy", you can request substitutes in their assortments but the things you request may cost more so you may pay more than you would for the standard assortment.
