Do you have to turn the chicken/hen over to brown when roasting in a pan with a rack to get both sides brown?
If you like it browned all the way around, yes, you can start it upside down (on its breast) for half the cooking time and then flip it over (breast side up) for the remaining portion of cooking. This can be tricky though, especially if it's a big bird - not so easy to flip over a hot bird, so be careful if you use this method!
An easier way is to vertically roast it - like beer can chicken - this way you're not flipping it and fooling with it, and it browns evenly all the way around the bird....Open beer can and take several gulps (make them big gulps so that the can is half full, or pour out half if you're not a beer drinker). Place beer can on a solid surface. Grabbing a chicken leg in each hand, plunk the bird cavity over the beer can. Transfer the bird-on-a-can to your roasting pan, balancing the bird on its 2 legs and the can like a tripod. You can also do this with a can of chicken stock or veggie stock - just make sure you drain half of it out before starting.
