Wedding gift ideas? Young couple just starting out, I don't necessarily want to go down the glassware route?

A dear friend of mine is getting married in November - and I'm really needing inspiration for ideas what to give her. They're almost mid-20's, both just starting out, however that being the case they're apt to get 75 sets of crystal glassware and 100 vases and sets of dinnerware.
Anyone got any ideas for something tasteful and useful but a little unusual? And where I could find it? She's big-time into horses, and is a down-to-earth sort of person who I think would appreciate anything beautiful - but I just want something more interesting than sheets or a set of Waterford tumblers...

As "dull" as it may sound, you should start with their registry, especially if they are just starting out. Couples register for the things that they need. While it may not sound interesting to get glassware, if they asked for it, they need it, and it's expensive for them buy on their own, they need your help.
But if you want to do something different or interesting, you could start with the registry and then supplement it with something related that is more personal and interesting.
For instance, did they register for wine glasses? Get 2 of them, not the whole set, and add a wine saver pump or wine aerator to it. They registered for highball glasses? Get them a martini shaker, drink recipe book and personalized coasters along with a couple of their glasses. Registered for pots and pans? Get one, plus your favorite cook book, spices/sauces, a personalized apron and kitchen sign for them.
Seriously, start with what they asked for because they need it, but have fun by adding your own personal touch along the same theme. Makes it useful and personal.
